- 1 lb fettuccine pasta, uncooked
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 3 tablespoons Cajun seasoning
- 1/4 cup butter
- 2 tablespoons garlic puree
- 3 cups heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2/3 cup shredded Parmesan cheese
- 2 tablespoons chopped chives
Instructions
- Cook Pasta: Cook fettuccine according to package directions. Drain and set aside.
- Season and Cook Chicken: In a bowl, toss chicken cubes with Cajun seasoning. In a large skillet over medium-high heat, cook chicken for 8 minutes, or until browned and cooked through.
- Make Sauce: Add butter and garlic puree to the skillet. Stir until butter is melted. Pour in heavy cream, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 8 minutes, stirring occasionally.
- Combine and Finish: Remove the lid and stir in cooked fettuccine. Cook for 4 minutes, or until pasta is well coated. Stir in Parmesan cheese until melted. Add chopped chives and serve immediately.
Notes
- Adjust the amount of Cajun seasoning to your preferred spice level.
- For a richer flavor, you can use half-and-half or whole milk in addition to the heavy cream.
- If you don’t have garlic puree, you can use 2-3 cloves of minced garlic.
- Garnish with additional Parmesan cheese and chopped chives, if desired.
