For the crust:
- 1 1/2 cups graham crackers, crushed
- 1 stick butter, melted
- 1/2 cup granulated sugar
For the cream cheese layer:
- 8 oz cream cheese, softened
- 2 cups heavy whipping cream
- 1/4 cup granulated sugar
For the pudding layer:
- 2 boxes instant butterscotch pudding mix
- 2 1/2 cups milk
For the whipped cream layer:
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
For the topping:
- Butterscotch ice cream topping, as desired
- Shaved chocolate, as desired
Instructions
- Prepare the Crust: Preheat your oven to 350ยฐF (175ยฐC) and grease a 9ร9 inch baking dish. In a mixing bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Stir well until the mixture is evenly combined, then press it firmly into the bottom of the prepared baking dish. Bake for 15 minutes, then remove from the oven and let cool completely.
- Make the Cream Cheese Layer: In a separate bowl, combine the softened cream cheese, heavy whipping cream, and granulated sugar. Beat together until smooth and fluffy. Once the crust has cooled, spread the cream cheese mixture evenly over it.
- Prepare the Pudding Layer: In another bowl, whisk together the instant butterscotch pudding mix and milk until smooth and creamy. Spread this pudding mixture evenly over the cream cheese layer in the baking dish.
- Whip the Cream: In a clean bowl, beat the heavy whipping cream and powdered sugar together until soft peaks form. Gently spread the whipped cream over the pudding layer.
- Chill: Cover the dessert and chill in the refrigerator for at least 4 hours to allow it to set and the layers to meld together.
- Add Topping and Serve: Just before serving, drizzle with butterscotch ice cream topping and garnish with shaved chocolate. Slice and enjoy!
