Ingredients

Units Scale

Filling

  • 3/4 cup shredded cooked chicken
  • 1/4 cup Frank's RedHot buffalo wing sauce
  • 2 Tbsp. mayonnaise
  • 1/4 tsp. kosher salt
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese (optional)

Dough and Topping

  • 1 (12-oz.) can Pillsbury biscuit dough
  • 2 Tbsp. unsalted butter, melted
  • 2 tsp. ranch seasoning
  • Cooking spray

For Serving (Optional)

  • Ranch dressing
  • Blue cheese dressing

Instructions

  1. Prepare Oven and Pan: Arrange an oven rack in the center and preheat oven to 350°F. Grease an 8-inch round pan with cooking spray to prevent sticking and ensure even baking.
  2. Mix Chicken Filling: In a medium bowl, combine shredded cooked chicken, Frank’s RedHot buffalo wing sauce, mayonnaise, and kosher salt. Mix well until all ingredients are fully incorporated to create a flavorful, moist filling.
  3. Shape Biscuit Bombs: Flatten each biscuit dough round to approximately 1/4 inch thickness using your fingers. Spoon about one tablespoon of the chicken mixture onto each flattened biscuit. Sprinkle Monterey Jack cheese and, if using, crumbled blue cheese evenly over the filling. Gather the edges of the dough tightly around the filling, pinching seams to seal completely and shape into balls. Place them seam-side down in the prepared pan.
  4. Prepare and Apply Ranch Butter: In a small bowl, stir together the melted unsalted butter and ranch seasoning until combined. Brush this seasoned butter generously over each biscuit bomb’s surface to add flavor and aid in browning during baking.
  5. Bake Biscuit Bombs: Place the pan in the preheated oven and bake for 10 to 12 minutes until the biscuits begin to turn golden brown. Remove the pan and brush the biscuit bombs again with the ranch butter. Continue baking for an additional 5 minutes or until the biscuits are toasted and deeply golden brown.
  6. Serve: Transfer the baked biscuit bombs to a serving platter. Serve warm accompanied by ranch dressing and blue cheese dressing for dipping, if desired.

Notes

  • For extra spice, add a pinch of cayenne pepper to the chicken mixture.
  • Make sure to seal the biscuit seams tightly to prevent filling from leaking during baking.
  • Blue cheese is optional, but adds authentic flavor; substitute with more Monterey Jack if preferred.
  • These can be prepared ahead and baked just before serving for convenience.
  • Use gluten-free biscuit dough to make this recipe gluten-free if needed.
