- 1 cup broccoli florets, chopped into small pieces
- 3/4 cup shredded sharp cheddar cheese
- 2 tablespoons mayonnaise
- 2 tablespoons olive oil
Instructions
- Preheat and Prep: Preheat oven to 350°F (177°C). Butterfly chicken breasts by slicing through the side, creating a pocket. If needed, pound chicken to an even thickness of about 1 inch. Season chicken with salt, pepper, paprika, and garlic powder.
- Stuff and Sear: In a bowl, combine chopped broccoli, cheddar cheese, and mayonnaise. Stuff the mixture into the chicken pockets and secure with toothpicks if needed. Heat olive oil in an oven-safe skillet over medium heat. Sear stuffed chicken breasts until browned on both sides.
- Bake: Transfer the skillet to the oven and bake for 15-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Serve: Remove from oven and let rest for a few minutes before serving.
