    • 1/4 teaspoon ground black pepper
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon ground paprika
    • 4 tablespoons olive oil, divided
    • 4 boneless, skinless chicken breasts
  • For the Filling:

    • 2 cups chopped broccoli florets (smaller pieces)
    • 1/2 cup shredded cheddar cheese
    • 6 ounces cream cheese, room temperature
    • 1 clove garlic, minced
    • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Preheat and Season: Preheat oven to 375ยฐF (190ยฐC). In a small dish, combine salt, pepper, onion powder, garlic powder, and paprika. Drizzle chicken breasts with 2 tablespoons of olive oil and rub with the seasoning mixture.
  2. Make Filling: In a bowl, combine chopped broccoli, cheddar cheese, cream cheese, minced garlic, and salt and pepper to taste.
  3. Stuff Chicken: Cut a wide pocket into each chicken breast, being careful not to cut all the way through. Stuff each breast with the broccoli and cheese filling.
  4. Sear and Bake: Heat remaining 2 tablespoons olive oil in an oven-safe skillet over medium-high heat. Sear stuffed chicken breasts on each side until golden brown. Transfer the skillet to the oven and bake for 25-35 minutes, or until chicken is cooked through.

Notes

  • You can use any type of cheese you like for the filling, such as mozzarella, Monterey Jack, or a blend.
  • If you donโ€™t have an oven-safe skillet, you can sear the chicken on the stovetop and then transfer it to a baking dish to finish cooking in the oven.
