  • 3 tablespoons brown sugar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons bourbon whiskey
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup cold unsalted butter, cut into small cubes
  • 2 scallions, diced

Instructions

  1. Prep Chicken and Preheat: Preheat oven to 425°F (220°C). In a shallow bowl, whisk together egg and milk. In another bowl, combine pecans, breadcrumbs, and salt. Pound each chicken breast to a thickness of ¾ inch. Dip chicken in the egg mixture, then coat in the pecan mixture.
  2. Cook Chicken: Heat olive oil in a large oven-safe skillet over medium heat. Add chicken and cook until golden brown on one side. Flip chicken, transfer the skillet to the oven, and bake for 15 minutes, or until the internal temperature reaches 165°F (74°C).
  3. Make Bourbon Sauce: While chicken bakes, whisk together brown sugar, Dijon mustard, bourbon, soy sauce, and Worcestershire sauce in a saucepan. Simmer over medium-low heat. Remove from heat and whisk in butter cubes until melted.
