Iced Butterfly Pea Blue Latte (for a 330ml glass)

  • 12 to 14 dried Butterfly pea flowers (or ½ tsp Butterfly pea powder/Blue matcha)
  • ½ cup (120 ml) water, heated until almost boiling
  • ¾ cup (170 ml) milk (any type)
  • 1 tbsp sweetened condensed milk (or any sweetener)
  • Ice cubes

Hot Butterfly Pea Blue Latte (for a 200ml cup)

  • 8 to 10 dried Butterfly pea flowers (or ¼ tsp Butterfly pea powder/Blue matcha)
  • ¼ cup (50 ml) water, heated until almost boiling
  • ¾ cup (150 ml) milk (any type)
  • ½ tbsp sweetened condensed milk (or any sweetener)


Instructions

  1. Prepare Butterfly Pea Tea: For iced latte, steep 12-14 dried butterfly pea flowers in ½ cup (120 ml) nearly boiling water for 7-8 minutes. For hot latte, steep 8-10 flowers in ¼ cup (50 ml) water similarly. If using butterfly pea powder, whisk ½ tsp (iced) or ¼ tsp (hot) powder thoroughly into warm water until fully dissolved for a smooth blue tea without clumps.
  2. Prepare Milk Mixture: For iced latte, mix ¾ cup (170 ml) milk with 1 tbsp sweetened condensed milk in a separate glass. For hot latte, heat ¾ cup (150 ml) milk on medium-low heat until steaming and gently boiling, then stir in ½ tbsp sweetened condensed milk until fully combined.
  3. Finish Butterfly Pea Tea: After steeping flowers for 7-8 minutes, press them with a spoon to release more color. Strain the flowers out and set aside the vibrant deep blue tea, allow to cool for iced latte before use.
  4. Assemble Iced Blue Latte: Fill your glass ¾ full with ice cubes. Pour in the milk and sweetened condensed milk mixture up to ¾ of the glass. Slowly and gently pour cooled blue tea over the milk mixture to create beautiful layered effect. Optionally, add frothed milk, whipped cream, or butterfly pea powder/flower garnish on top.
  5. Assemble Hot Blue Latte: Pour the hot blue butterfly pea tea gently into the cup containing the heated milk mixed with sweetened condensed milk. Stir well to combine. Optionally, add frothed milk or blue milk foam on top, and garnish with dried flowers or powder for decoration.
