Description

This BBQ Chicken Pizza is a delicious and easy-to-make recipe that’s perfect for a casual weeknight dinner or a fun gathering with friends. The homemade dough is topped with tangy BBQ sauce, tender chicken, a blend of cheeses, and a sprinkle of pickled jalapeños for a little kick.

Ingredients

Units Scale

For the Sheet Pan:

  • 1/4 cup olive oil

For the Dough:

  • 1 1/2 cups warm water (110 degrees F)
  • 2 packets active dry yeast (1/4 ounce each)
  • 2 teaspoons granulated sugar
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 4 cups all-purpose flour, spooned and leveled, plus more for work surface

Toppings:

  • 1/2 to 3/4 cup barbecue sauce
  • 1 cup shredded pepper jack cheese, divided
  • 1/2 cup shredded cheddar jack cheese blend, divided
  • 1 cup cooked shredded chicken breast
  • 1/4 cup pickled jalapeños
  • 1/4 cup diced red onion
  • 1 scallion, diced

Instructions

  1. Prep pan and dough: Brush a rimmed baking sheet with olive oil. In a large bowl, combine warm water and yeast; let stand until foamy. Whisk in sugar, oil, and salt. Add flour and stir until a sticky dough forms.
  2. Knead and rise: Turn dough onto a floured surface and knead until smooth. Transfer to the prepared sheet pan, cover with plastic wrap, and let rise until doubled in size, about 1 hour.
  3. Preheat and shape: Preheat oven to 450 degrees F (230 degrees C) with a pizza stone or inverted baking sheet on the lower rack. Gently press and stretch the dough to cover the pan. Let stand for 30 minutes, then stretch again if needed.
  4. Prepare crust: Pierce the dough all over with a fork.
  5. Add toppings: Brush dough with BBQ sauce, leaving the edges bare. Top with half of the cheeses, chicken, jalapeños, red onion, and scallion. Sprinkle with remaining cheese.
  6. Bake: Bake on the hot stone for 20-25 minutes, or until golden brown and bubbly.
  7. Serve: Let cool for 10 minutes before slicing and serving.

Notes

  • Yeast: Make sure your yeast is fresh for the dough to rise properly.
  • BBQ sauce: Use your favorite brand of BBQ sauce.
  • Toppings: Feel free to add other toppings, such as corn, cilantro, or different types of peppers.
