  • 2 large boneless, skinless chicken breasts, cooked and chopped into small pieces
  • 1 (8 oz) bag frozen cauliflower rice, defrosted
  • 2 tablespoons olive oil
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 3/4 cup BBQ sauce
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 3/4 cup shredded cheddar cheese

Instructions

  1. Preheat and Prep: Preheat oven to 400ยฐF (200ยฐC). Grease an 8ร—8 inch baking dish with nonstick spray.
  2. Combine Ingredients: In a large bowl, combine chopped chicken and defrosted cauliflower rice.
  3. Sautรฉ Aromatics: Heat olive oil in a skillet over medium heat. Add diced onion and cook until softened. Stir in garlic and cook for another minute.
  4. Mix and Bake: Add the sautรฉed onion and garlic to the bowl with the chicken and cauliflower. Stir in BBQ sauce, eggs, salt, pepper, and chili powder. Mix well. Pour the mixture into the prepared baking dish and top with shredded cheddar cheese. Bake for 45 minutes, or until set and golden brown.
  5. Serve: Let the casserole cool for 5 minutes before serving.
