Chicken:

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Bang Bang Sauce:

  • 1 1/4 cups (290 g) mayonnaise
  • 2/3 cup Thai sweet chili sauce
  • 2 teaspoons Sriracha, or more to taste
  • 2 tablespoons honey

Instructions

  1. Prepare Chicken: In a large bowl, mix chicken cubes with oil, paprika, garlic powder, salt, and pepper.
  2. Skewer Chicken: Thread 4-5 chicken cubes onto each soaked skewer.
  3. Make Bang Bang Sauce: Combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Set aside half of the sauce.
  4. Coat Chicken: Brush chicken with remaining sauce and air fry at 400°F for 11-12 mins, flipping halfway.
  5. Finish and Serve: Drizzle reserved sauce over cooked skewers before serving.
  6. Oven Instructions: Preheat oven to 400°F. Bake skewers for 20-25 mins, then brush with sauce.
  7. Grill Instructions: Grill skewers for 8-10 mins per side, then brush with sauce.
