  • 1 cup old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/4 cup mini chocolate chips

Wet Ingredients:

  • 1 overripe banana
  • 2 eggs
  • 1/2 cup unsweetened almond milk or milk of your choice
  • 2 tablespoons honey or sweetener of choice

Instructions

  1. Preheat oven: Preheat the oven to 350 degrees Fahrenheit.
  2. Blend: In a high-speed blender, combine all ingredients except chocolate chips. Blend until smooth.
  3. Divide batter: Evenly divide the batter and chocolate chips among four ramekins.
  4. Bake: Bake for 25 minutes until puffed and golden brown.
  5. Cool and serve: Allow to cool for at least five minutes before serving warm or at room temperature.

  • These can also be cooked in the air fryer at 300 degrees for 10-12 minutes.
