Indulge in this decadent Baked Shrimp Scampi Pasta recipe that combines succulent shrimp, creamy cheeses, and flavorful herbs baked to perfection. It’s a delightful dish that will impress your family and guests alike.

Ingredients

Units Scale

Main Sauce:

  • 2 Tbsp butter
  • 1 tsp jarred minced garlic
  • 1 Tbsp all-purpose flour
  • 1/3 cup whole milk
  • 1/4 cup chicken broth
  • 1/8 tsp salt
  • 1/8 tsp pepper

Cheese Mixture:

  • 1 egg (slightly beaten)
  • 1/8 cup Parmesan cheese (shredded)
  • 1/4 cup ricotta cheese

Additional Ingredients:

  • 4 oz uncooked pasta (any shape)
  • 1/2 lb raw shrimp, thawed and peeled
  • 1/2 cup mozzarella cheese (shredded)
  • 1 tsp chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 350 degrees F. Cook the pasta according to the package directions.
  2. In a medium saucepan, melt the butter on medium heat. Stir in the minced garlic and flour, cooking until bubbly.
  3. Gradually stir in the milk, broth, salt, and pepper. Cook and stir for 2-3 minutes, then set aside.
  4. Mix the beaten egg, Parmesan cheese, and ricotta cheese in a medium bowl.
  5. Whisk together the broth mixture, cheese mixture, and pasta. Pour into two prepared baking dishes.
  6. Layer shrimp over the pasta mixture in the dishes, then sprinkle with mozzarella and parsley.
  7. Bake for 30 minutes, then allow to cool for 5 minutes before serving.

Notes

  • I buy frozen shrimp that is already peeled, deveined, & tails off to save prep time. Thaw before using in this recipe.
  • Rinsing the pasta with cold water helps prevent the egg in the sauce from cooking too early. This enhances the binding of the sauce and pasta during baking.
