Ingredients

  • 8 boneless, skinless chicken thighs
  • Juice of 2 lemons
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 3 teaspoons Dijon mustard
  • 3 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon dried dill
  • 1 teaspoon paprika
  • 23 teaspoons kosher salt
  • 1 teaspoon black pepper

Instructions

  1. Marinate Chicken: In a large bowl or ziplock bag, combine chicken thighs with lemon juice, olive oil, garlic, Dijon mustard, oregano, thyme, dill, paprika, salt, and pepper. Mix well to coat the chicken. Marinate in the refrigerator for 2-6 hours.
  2. Preheat and Bake: Preheat oven to 350ยฐF (177ยฐC). Arrange marinated chicken in a baking dish and pour the marinade over the top.
  3. Bake: Bake for 40 minutes, or until the internal temperature reaches 165-175ยฐF (74-79ยฐC).
  4. Broil (Optional): Broil for the last 2-3 minutes to achieve a more golden brown color.

Notes

  • You can use bone-in, skin-on chicken thighs if you prefer. Adjust cooking time accordingly.
  • If you don’t have fresh herbs, you can substitute with dried herbs, but reduce the amount by half.
  • Serve with your favorite sides, such as roasted vegetables, rice pilaf, or a Greek salad.
