- 1 lb ground chicken
- 1 large egg
- 1/2 cup almond flour
- 1/2 cup grated Parmesan cheese, divided
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups marinara sauce (from a jar)
- 1 cup shredded mozzarella cheese
Instructions
- Preheat and Make Meatballs: Preheat oven to 400ยฐF (200ยฐC). In a large bowl, combine ground chicken, egg, almond flour, ยฝ cup Parmesan cheese, garlic, onion powder, salt, and pepper. Mix well and shape into meatballs.
- Assemble and Bake: Pour 1 cup marinara sauce into the bottom of a baking dish (a cast iron skillet or oven-safe sautรฉ pan works well). Arrange meatballs in the dish and top with remaining marinara sauce. Sprinkle with mozzarella cheese and remaining Parmesan cheese.
- Bake: Bake for 25-30 minutes, or until meatballs reach an internal temperature of 165ยฐF (74ยฐC).
Notes
- You can use ground turkey or a mixture of ground chicken and turkey instead of just chicken.
- If you don’t have almond flour, you can use breadcrumbs or another type of gluten-free flour.
- For a richer flavor, you can use a combination of mozzarella and provolone cheese.
- Serve with your favorite pasta, zucchini noodles, or a side salad for a complete meal.
