- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon brown sugar
- 2 teaspoons salt
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
Instructions
- Preheat and Prep: Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a metal cooling rack on top.
- Season Chicken: Pat chicken drumsticks dry with a paper towel. In a small bowl, combine onion powder, garlic powder, brown sugar, salt, paprika, pepper, and cayenne pepper (if using). In a large bowl, toss chicken drumsticks with olive oil and the spice mixture to coat evenly.
- Bake: Arrange drumsticks on the prepared baking sheet. Bake for 35-45 minutes, or until the internal temperature reaches 165°F (74°C).
Notes
- Using an oven-safe cooling rack helps the chicken crisp up as it bakes.
- If serving chicken without the skin, rub spices under the skin before baking, then remove the skin after cooking.
