Description

This Baked Buffalo Chicken is a simple and flavorful dish that’s perfect for a quick weeknight meal! Tender chicken breasts are coated in a creamy buffalo sauce with a hint of ranch flavor, then baked to perfection with a cheesy topping.

Ingredients

Units Scale
  • 3 (6-ounce) boneless, skinless chicken breasts
  • 3/4 cup plain Greek yogurt (not regular yogurt)
  • 1/4 cup buffalo wing sauce
  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 cup shredded Colby Jack cheese

Instructions

  1. Marinate Chicken: Combine chicken breasts, Greek yogurt, buffalo sauce, ranch seasoning, and garlic powder in a zip-top bag. Seal and shake to coat. Marinate in the refrigerator for 30 minutes.
  2. Preheat and Bake: Preheat oven to 375°F (190°C). Grease a 9×9 inch or 2-quart baking dish. Place marinated chicken in the dish and sprinkle with cheese.
  3. Bake: Bake uncovered for 35-40 minutes, or until chicken reaches an internal temperature of 165°F (74°C). If the cheese browns too quickly, tent with foil towards the end of the baking time.
  4. Serve: Serve hot with your favorite sides, such as roasted vegetables or rice.

Notes

  • You can use boneless, skinless chicken thighs instead of breasts, but adjust cooking time as needed.
  • If you don’t have Greek yogurt, you can substitute with plain yogurt, but the sauce may be slightly thinner.
  • Adjust the amount of buffalo sauce to your preferred spice level.
  • For a thicker sauce, you can add a tablespoon of cornstarch to the marinade.
