Ingredients

Units Scale

Rice Base:

  • 1 1/2 cups long-grain white rice
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

Vegetables & Aromatics:

  • 1/2 yellow onion, diced
  • 1 clove garlic, minced

Seasonings & Flavorings:

  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 can diced tomatoes with green chiles (with juice)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon chili powder

Additional Ingredients:

  • 1/2 cup Mexican Blend cheese
  • 1 chipotle pepper in adobo sauce, minced (optional)
  • 1/4 cup chopped fresh cilantro (plus more for garnish)
  • Juice of 1/2 lime

Instructions

  1. Cook the Rice
Cook the rice according to package directions. This step ensures perfectly fluffy rice as the base for the dish. Once cooked, set it aside.
  2. Sautรฉ Aromatics
Add olive oil, butter, and diced onions to a large skillet set over medium heat. Stir frequently and cook until the onions have softened and turned translucent. Add the minced garlic and sautรฉ for an additional 30 seconds to enhance the aroma of the dish.
  3. Prepare the Flavorful Tomato Base
Add the canned diced tomatoes (with their juice), cumin, smoked paprika, and chili powder to the skillet. Stir everything together and cook for 1 minute to incorporate the seasonings. Remove the skillet from heat to prevent overcooking.
  4. Combine and Incorporate Final Ingredients
Once the rice is cooked, transfer it to the skillet containing the tomato mixture. Add the Mexican Blend cheese, minced chipotle pepper (if using), fresh chopped cilantro, and lime juice. Mix well until the ingredients are fully combined and the cheese has melted into the rice.
  5. Garnish and Serve
Plate the Mexican rice and garnish it with additional chopped cilantro for a fresh, vibrant touch. Serve warm and enjoy!

Notes

  • Cheese Alternatives:ย If you donโ€™t have Mexican Blend cheese, cheddar or Monterey Jack work great as substitutes.
  • Spice Level:ย Adjust the spice level by varying the amount of chili powder and chipotle pepper used. Omit the chipotle pepper entirely for a milder version.
  • Uses:ย This dish can be used as a side dish for tacos, burritos, or grilled chicken, or topped with protein to make a complete meal.
  • Storage:ย Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or in the microwave with a splash of water to restore the texture.
