For Crust:

- 2 cups graham cracker crumbs

- 3 large eggs
- 1/4 cup sugar
- 1/4 teaspoon salt
For Apples:
- 2 large apples, peeled, cored, and sliced into small pieces
- 1/2 teaspoon cinnamon
- 3 tablespoons sugar
Optional Toppings:
- Caramel sauce (store-bought)
- Sea salt
Instructions
- Prepare Oven and Pan: Preheat oven to 350ยฐF. Line a 9ร9 baking pan with parchment paper and spray with cooking spray.
- Make Crust: In a medium bowl, mix melted butter, cinnamon, sugar, and graham cracker crumbs. Press evenly into the prepared pan using the bottom of a glass. Bake for 10 minutes.
- Prepare Apples: In a medium bowl, mix apples with sugar and cinnamon.
- Make Cheesecake Filling: In a mixer bowl, beat cream cheese, sugar, eggs, and salt on medium-high for 5 minutes until smooth. Gently fold in the prepared apples.
- Assemble and Bake: Pour the cheesecake filling over the crust. Level with a spatula. Bake uncovered for about 1 hour, or until the filling is set.
- Cool and Slice: Let the cheesecake cool completely before slicing into squares.
- Top and Serve: Drizzle with caramel sauce and sprinkle with sea salt.
Notes
- These bars will keep in the fridge for up to 5 days in an airtight container or wrapped tightly.
- To freeze, place fully cooled, uncovered bars on a pan in the freezer until frozen. Then, wrap in plastic wrap and aluminum foil for up to 3 months.
