- ½ cup dark brown sugar (lightly packed)
 - 2 teaspoons ground cinnamon
 
Bread Batter
- ½ cup salted butter (softened)
 - ½ cup granulated sugar
 - 2 large eggs
 - 1 teaspoon vanilla extract (pure or artificial)
 - 1 ½ cups all-purpose flour
 - 2 ½ teaspoons baking powder
 - ⅓ cup milk
 - ⅓ cup sour cream
 - Pinch of salt
 
Glaze
- ½ cup powdered sugar
 - 1 tablespoon milk
 - ¼ teaspoon vanilla extract
 
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Spray a loaf pan with nonstick cooking spray and set aside.
 - Prepare apple mixture: In a bowl, combine the diced apples, 2 tablespoons of dark brown sugar, and 1 teaspoon ground cinnamon. Drizzle with melted butter and mix to coat the apples evenly.
 - Make cinnamon sugar topping: Mix ½ cup brown sugar with 2 teaspoons ground cinnamon in a small bowl and set aside for layering.
 - Cream butter and sugar: In the bowl of a stand mixer fitted with a paddle attachment, or using an electric hand mixer, cream the softened butter and granulated sugar until light and fluffy.
 - Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition and scraping down the sides of the bowl as needed. Then mix in the vanilla extract.
 - Combine wet ingredients: In a separate bowl or measuring cup, whisk together the milk and sour cream.
 - Mix dry ingredients: In a large bowl, combine the all-purpose flour, baking powder, and pinch of salt.
 - Combine batter: Add the dry ingredients to the creamed butter and sugar mixture. Mix on low speed while gradually drizzling in the milk and sour cream mixture. Mix until just combined, scraping down the bowl as needed to ensure even mixing.
 - Assemble layers: Spread half of the batter evenly in the prepared loaf pan. Top with half of the apple mixture followed by half of the cinnamon sugar topping. Repeat layers with remaining batter, apples, and cinnamon sugar.
 - Bake: Bake in the preheated oven until the bread is golden brown and a knife inserted in the center comes out mostly clean, about 50 minutes.
 - Prepare the glaze: While the bread is baking, whisk together powdered sugar, 1 tablespoon milk, and ¼ teaspoon vanilla extract until smooth.
 - Cool and glaze: Allow the bread to cool completely on a wire rack. Once cooled, remove from pan and drizzle with the prepared glaze before serving.
