Vegetables
- 1 tablespoon olive oil
- 1 carrot, sliced
- 1 rib celery, sliced
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 potato, diced
Broth and Liquid
- 5 cups beef broth, reduced sodium
- 1 cup water
- 14 ounces canned diced tomatoes with juices
- 2 tablespoons tomato paste
Seasonings and Pasta
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup alphabet noodles, uncooked
Instructions
- Sauté Vegetables: In a large pot over medium heat, heat olive oil. Add sliced carrots, celery, diced onion, and minced garlic. Sauté the mixture until the onion softens and becomes translucent, about 5 minutes.
- Add Broth and Simmer: Pour in the reduced sodium beef broth, water, canned diced tomatoes with juices, tomato paste, and diced potato. Stir in Italian seasoning, salt, and pepper to taste. Bring the mixture to a boil, then reduce heat to a simmer. Let it cook gently for 15 minutes to allow the flavors to meld and the potatoes to soften.
- Cook Alphabet Noodles: Add the uncooked alphabet noodles to the simmering soup. Continue cooking for 7-8 minutes or until the noodles are cooked al dente, stirring occasionally to prevent sticking.
- Final Seasoning and Serve: Taste the soup and adjust salt and pepper if needed. Serve hot as a nourishing and fun meal perfect for all ages.
Notes
- Fresh vegetables can be substituted for frozen vegetables if preferred.
- For added protein, cooked ground beef, shredded chicken, or mini meatballs can be stirred into the soup.
- Be sure to watch the noodles as they cook to avoid overcooking and becoming mushy.
