- 1 medium russet potato (about 10 ounces), thinly sliced
- Juice from 1 (16-ounce) jar of pickles
- 1 tablespoon plus 1 teaspoon dried dill, divided
- 1 1/2 teaspoons extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper (increase for more heat)
- Optional: Greek Yogurt Ranch Dip, for serving
Instructions
- Marinate Potatoes: Place sliced potatoes in a bowl. Pour pickle juice over potatoes, add 1 tablespoon dill, and stir to coat. Marinate for 1 hour, stirring occasionally.
- Season Potatoes: Drain potatoes and pat dry. Toss with olive oil, salt, garlic powder, cayenne pepper, and remaining dill.
- Air Fry: Arrange potatoes in a single layer in the air fryer basket (cook in batches if needed). Air fry at 325ยฐF (163ยฐC) for 20 minutes, tossing every 5-7 minutes, until golden brown and crispy.
- Serve: Serve hot with Greek Yogurt Ranch Dip, if desired.
