Chicken
- 1 1/2 lbs boneless skinless chicken thighs, cut into 2-inch pieces
- 1 1/2 Tbsp garlic and herb seasoning
- 1 Tbsp olive oil
- 6 skewers, metal or bamboo
Garlic Parmesan Butter
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced or grated
- 1 Tbsp garlic and herb seasoning
- 1/2 tsp kosher salt
- 1/3 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Instructions
- Prepare: Soak bamboo skewers in water for at least 30 minutes if using to prevent burning during cooking. If using metal skewers, soaking is not necessary. Ensure the skewers fit comfortably in your air fryer basket.
- Season Chicken: In a large bowl, toss the chicken pieces with olive oil and garlic and herb seasoning thoroughly until each piece is well coated, enhancing the flavor before cooking.
- Prepare Skewers: Thread the seasoned chicken pieces onto the skewers, placing about 7-8 pieces per skewer for even cooking.
- Cook Chicken: Preheat the air fryer to 400°F. Place the skewers in the air fryer basket and cook for 8 minutes to start browning and cooking the chicken.
- Make Garlic Butter: While chicken cooks, combine softened butter, minced garlic, garlic and herb seasoning, kosher salt, chopped parsley, and grated Parmesan cheese in a bowl, mixing until smooth and evenly blended.
- Continue Cooking: After 8 minutes, flip the skewers over and brush generously with the prepared garlic parmesan butter. Air fry for an additional 7 minutes or until the internal temperature of the chicken reaches 165°F, indicating it is fully cooked and safe to eat.
- Brush and Serve: Remove the skewers from the air fryer, brush them with extra garlic parmesan butter for rich flavor, and serve immediately while hot and juicy.
Notes
- This recipe yields approximately 4 servings, but you can adjust the quantity as needed for more or fewer servings.
- For homemade garlic and herb seasoning, mix dried minced garlic, kosher salt, garlic powder, dried basil, dried parsley, black pepper, and red pepper flakes to taste.
- Oven alternative: Bake the skewers at 375°F for 20-25 minutes until cooked through.
- Grill alternative: Grill the skewers over medium-high heat for 8-10 minutes, turning as needed for even cooking.
