Instructions
- Preheat the air fryer
Preheat your air fryer to 190C (375F). This ensures the egg bites cook evenly. - Prepare the egg mixture
In a mixing bowl, whisk together the eggs, Greek yogurt, salt, and pepper until smooth. This will be the flavorful base of your egg bites. - Fill the molds
Divide the spinach, cheddar cheese, bacon, and shallots equally into six silicone molds. Place the molds in the air fryer basket, then pour the egg mixture evenly over the fillings in each mold. - Cook the egg bites
Air fry the egg bites for 8 minutes, or until they rise and are lightly browned on top. Be careful not to overcook.
