- 8 large eggs, divided
Yolk Filling
- 2 Tbsp. mayonnaise
- 2 1/2 tsp. sweet pickle relish
- 1 1/2 tsp. Dijon mustard, divided
- 1 1/2 tsp. yellow mustard, divided
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Coating
- 1/2 cup (60 g) all-purpose flour
- 1/2 cup finely ground Ritz cracker crumbs (from 15 to 20 crackers)
- 1/2 cup panko bread crumbs
- 1/4 tsp. garlic powder
- 1/2 tsp. dried parsley flakes
- Pinch of cayenne pepper (optional)
- Olive oil or other neutral cooking spray
Garnish
- Ground paprika, for dusting
- Fresh dill, for serving
Instructions
- Cook Eggs: Place 6 eggs in the air fryer basket and cook at 250°F for 17 minutes. Immediately transfer them carefully to an ice bath to cool before peeling.
- Prepare Yolk Mixture: Slice the cooled eggs in half lengthwise. Scoop out the yolks into a medium bowl, set aside the whites. Add mayonnaise, sweet pickle relish, 1 tsp Dijon mustard, and 1 tsp yellow mustard to the yolks. Mash and mix until very smooth and creamy. Season with salt and freshly ground black pepper. Transfer this mixture to a piping bag or zip-top bag and refrigerate until ready to use.
- Set Up Breading Stations: Pour flour into one shallow bowl. In another bowl, beat the remaining 2 eggs with 1/2 tsp Dijon mustard and 1/2 tsp yellow mustard, and season with a pinch of salt and pepper. In a third bowl, combine finely ground Ritz crackers, panko bread crumbs, garlic powder, dried parsley flakes, cayenne pepper if using, 3/4 tsp salt, and 1/4 tsp black pepper.
- Bread Egg Whites: One at a time, dip the hollowed egg whites first into the flour, then into the egg wash, allowing excess to drip. Then generously coat them with the panko and cracker crumb mixture, gently pressing to adhere. Arrange the coated egg whites on a baking sheet and lightly spray both sides with cooking spray.
- Air Fry Crispy Egg Whites: Arrange the breaded egg whites in the air fryer basket without overcrowding. Cook at 390°F, turning halfway through, for 8 to 10 minutes until golden and crispy. Let cool slightly.
- Assemble Deviled Eggs: Arrange the crispy egg whites on a serving platter. Pipe the prepared yolk mixture into each egg white half. Dust with ground paprika and garnish with fresh dill before serving.
Notes
- Use an ice bath immediately after air frying eggs to stop the cooking process and make peeling easier.
- For extra flavor, feel free to adjust the amount of mustard or relish in the filling to your taste.
- The cayenne pepper is optional but adds a nice subtle heat to the coating mixture.
- Ensure not to overcrowd the air fryer basket for even cooking and crisping.
- You can prepare the yolk filling ahead of time and keep refrigerated until ready to assemble.
