- 12 egg roll wrappers

Crab Cakes:
- 1 pound lump crab meat (or imitation crab meat)
- 1/2 cup panko breadcrumbs
- 1/4 cup mayonnaise
- 1/2 tablespoon Old Bay seasoning
- 1 teaspoon coarse black pepper
- 1 teaspoon coarse sea salt
- 1 tablespoon lemon juice
- 1/2 cup chopped green onions
- 1 tablespoon sriracha sauce
- 1 tablespoon stone-ground mustard
- 1 teaspoon prepared horseradish
Fire Sauce:
- 1 1/2 cups sour cream
- 1/2 cup sweet chili sauce
- 1/2 tablespoon hot sauce
- 2 teaspoons Old Bay seasoning
Instructions
- Make Crab Cakes: Preheat air fryer to 400°F (200°C) for 5 minutes. In a bowl, combine all crab cake ingredients. Mix well and form into small balls.
- Air Fry Crab Cakes: Cook crab cakes in the air fryer for 10 minutes, or until golden brown and cooked through.
- Make Fire Sauce and Slaw: While crab cakes cook, whisk together sour cream, sweet chili sauce, hot sauce, and Old Bay seasoning in a bowl. Set aside ¾ cup for dipping. Toss shredded cabbage with the remaining sauce.
- Assemble Egg Rolls: Cut each crab cake in half. Lay an egg roll wrapper flat and spread 2 tablespoons of cabbage slaw down the center. Top with 3 crab cake halves. Fold the egg roll wrapper (see detailed instructions in the original recipe). Brush with egg wash (1 egg beaten with 1 tablespoon water).
- Air Fry Egg Rolls: Preheat air fryer to 400°F (200°C) for 5 minutes. Lightly grease the air fryer basket. Cook egg rolls in batches for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve: Serve hot with the reserved fire sauce for dipping.
Notes
- If you don’t have an air fryer, you can bake the crab cakes and egg rolls in a preheated oven at 400°F (200°C) for about 15-20 minutes, or until golden brown and cooked through.
- Adjust the amount of sriracha and hot sauce to your preferred spice level.
- Serve with your favorite dipping sauces, such as marinara sauce or sweet and sour sauce.
