Instructions

  1. Pound and Prepare Chicken: Place the chicken breasts in a gallon-sized ziptop bag. Pound them until they are about 1/2 inch thick for even cooking, then cut each breast into two pieces.
  2. Marinate: Put the chicken pieces back in the bag. Add dill pickle juice and water, seal, and refrigerate to marinate for 30 minutes to infuse flavor and tenderize the meat.
  3. Prepare Egg Mixture: In a bowl, whisk together the eggs and whole milk until well combined, creating a coating that will help the breading stick.
  4. Mix Dry Coating: In another bowl, blend together flour, corn starch, powdered sugar, paprika, salt, black pepper, and garlic powder until evenly mixed.
  5. Bread Chicken: Remove marinated chicken from the bag. Dip each piece first in the egg mixture, then coat thoroughly in the dry flour mixture so the whole surface is covered.
  6. Prepare Air Fryer: Spray the air fryer basket with non-stick cooking spray to avoid sticking.
