Ingredients

Units Scale

Meatball Mixture

  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup breadcrumbs (panko or regular)
  • 3 tbsp grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp parsley (dried) or 2 tbsp fresh

Instructions

  1. Mix Ingredients: In a large mixing bowl, combine ground chicken, egg, breadcrumbs, Parmesan cheese, salt, pepper, garlic powder, onion powder, paprika, olive oil, and parsley. Mix thoroughly until all ingredients are evenly incorporated.
  2. Shape Meatballs: Using a heaping tablespoon of the mixture, shape it into a ball. Repeat with the remaining mixture, resulting in approximately 24 meatballs. Place the shaped meatballs on a parchment-lined baking sheet.
  3. Preheat Air Fryer: Preheat your air fryer to 400°F (200°C). You can line the basket with foil or spray it with cooking spray for easier cleanup.
  4. Cook Meatballs: Place the meatballs in a single layer inside the air fryer basket. Cook for 10 minutes, flipping halfway through, until they are browned and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (74°C).
  5. Serve: Remove the meatballs from the air fryer. Optionally, re-warm all the cooked meatballs together for a few minutes. Serve warm with marinara sauce or your favorite dipping sauce.

Notes

  • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave before serving.
  • To Freeze: Arrange uncooked or cooked meatballs on a parchment-lined sheet, freeze until solid, then transfer to a ziplock bag. Freeze for up to 3 months.
  • From Frozen: Cook from frozen in the air fryer at 400°F for about 12 minutes, shaking halfway through, until heated thoroughly.
