For the Chicken and Vegetables
- 1 cup chicken breast, cubed, seasoned with salt and pepper
- 1 cup zucchini, cubed
- 1 cup squash, cubed
- 1 cup carrot, sliced
For the Sauce
- 4 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp rice vinegar
- 1 tsp garlic, minced
- 1/2 tsp ground ginger
- 2 tbsp sesame seeds
- Brown sugar, optional (to taste)
Instructions
- Prepare the Sauce โ In a bowl, mix together the soy sauce, sesame oil, rice vinegar, minced garlic, ground ginger, and brown sugar (if using) until well combined.
- Coat the Chicken and Vegetables โ Add the cubed chicken breast, zucchini, squash, and carrots to a large bowl. Pour the prepared sauce over the ingredients and toss until everything is thoroughly coated.
- Arrange in Air Fryer โ Place the coated chicken and vegetables in a single layer in the air fryer basket. Ensure not to overcrowd or stack the ingredients for even cooking.
- Air Fry โ Cook at 380ยฐF (193ยฐC) for 15-20 minutes. Pause every 5 minutes to shake the basket or stir for even cooking.
- Finish and Serve โ When the chicken and vegetables are cooked through and slightly browned, remove them from the air fryer. Sprinkle with sesame seeds and serve immediately, optionally over rice or cauliflower rice.

- For extra flavor, marinate the chicken and vegetables in the sauce for 15 minutes before air frying.
