Description

A rich and flavorful African-inspired Chicken Peanut Stew that combines tender chicken with a creamy peanut sauce, hearty vegetables, and aromatic spices. This comforting stew is perfect for chilly days and is sure to become a family favorite.

Chicken Marinade:

  • 2 pounds boneless skinless chicken thighs
  • 1 tablespoon minced garlic
  • 1 inch ginger root, peeled and grated or 2 teaspoons ginger paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 tablespoons olive oil

Stew:

  • 1 cup diced onion from about 1 medium onion
  • 1 tablespoon tomato paste
  • 3 cups water, divided
  • 2 stock cubes (Maggi) About 4g per cube
  • 3/4 cup natural peanut butter
  • 4 oz mushrooms, sliced
  • 1/4-1/2 cup frozen spinach, thawed and squeezed to remove excess water

Instructions

  1. Season chicken: Toss chicken with garlic, ginger, salt, and white pepper. Set aside.
  2. Sauté Mushrooms: Cook mushrooms in oil until browned. Remove from pot.
  3. Cook Chicken: Brown chicken in the same pot. Remove from pot.
  4. Sauté Onions: Cook onions until translucent. Add garlic, ginger, and tomato paste.
  5. Add Water and Stock Cubes: Pour in water, add stock cubes, and bring to a simmer.
  6. Add Peanut Butter: Stir in peanut butter until smooth.
  7. Add Back Chicken: Return chicken to the pot and simmer.
  8. Add Veggies: Reintroduce mushrooms and spinach. Simmer briefly before serving.

Notes

  • For added spice, sprinkle red pepper flakes before serving.
